Summer corn chowder

After a recent visit to Panera Bread, I knew I had to find a recipe similar to the delicious summer corn chowder that they serve. I rarely make soup at home but this was one I had to try! 
Here is a link to the recipe that I used. I modified it slightly. It was pretty straightforward and easy to follow but I always find photos extremely helpful!

Here is my first ever cooking tutorial. Hope you enjoy!

First, add the olive oil and butter to pot and heat.

Next, chop up a medium sized onion and add to pot.

Add flour to thicken.

Then, chop up potatoes into small chunks and add to pot. I used about 10 small red potatoes for a pop of color.

Add your broth and bring to a boil. The recipe called for vegetable broth but this was all I had at home. Since I am not a vegetarian, it worked just as well. Next time I am going to add chicken to this recipe.

I picked up some fresh corn on the cob from my local farmers market. Canned corn will work too but fresh is always better! 

Next, cut the kernels off from the cob.

I cheated and used my favorite frozen pepper trio from good ol' Trader Joe's. (I put these in everything) They are very inexpensive and great because you only use what you need.

Then, add all vegetables and half & half into pot and simmer. I only used half the amount of cream called for to save on calories. It is bathing suit season after all. It still tasted creamy, and I felt less guilty.

In addition to salt and pepper I added cayenne pepper and garlic salt to give it some extra flavor. Once the soup is hot use a ladle to pour into individual bowls. Add some fresh basil and tomatoes as a garnish for color and taste.

And finally, bon appetit! I must say that I prefer my tasty version over Paneras any day.
